This weekend we attended a picnic where one of our friends brought a wheat berry salad. Their version wasn’t one we could eat (had cheese), but it looked so good we wanted to recreate it ourselves. Our version is incredibly easy to make and super tasty! Wheat berries may just be our new favorite grain!
Ingredients:
2 cups raw wheat berries
about 10 baby carrots, sliced
1 bell pepper, diced
1 can white beans
1/4 cup sliced kalamata olives
1/4 cup minced sun dried tomatoes
1 teaspoon fresh thyme
1/2 package Follow Your Heart mozzarella, grated
2 cloves garlic, minced
1/4 cup olive oil
1/8 cup balsamic vinegar
Salt, pepper, and red chili flake to taste
Directions:
1. Cook the wheat berries in 7 cups of water. Bring to a boil, then simmer for an hour. Drain and refridgerate until ready to use.
2. Mix wheat berries, carrots, bell pepper, beans, olives, sun dried tomatoes, thyme, and mozzarella in a large bowl.
3. In a much smaller bowl, whisk garlic, olive oil, and vinegar. Pour over the salad and mix very well. Season to taste.
4. Allow this to sit for about a half hour at room temperature before eating. We had ours over baby spinach. Even better the next day!
